in the daily production process of various breweries, the cleaning and processing of negative electrode materials can be sold for more than 100000 yuan. Although the sterilization is strictly implemented according to the established process, due to many inflection points of production pipelines, long lines, aging and blockage of scrubbers in tanks, mismatched pump pressure and other factors, it is difficult to clean all parts of pipelines and tanks, especially some dead corners. However, the incomplete cleaning of some parts will eventually lead to the outbreak of microorganisms in the whole system, which will seriously affect the product quality

fermentation tank cleaning is a cleaning process designed to solve this common problem in beer production. The purpose is to increase the cleaning intensity in the off-season of production to thoroughly clean the places that are not cleaned in place at ordinary times, so as not to cause microbial outbreak due to the accumulation effect of dirt. At the same time, through the large-scale cleaning process, the cleaning facilities of the whole production system can be inspected and maintained

it is not necessary to carry out the large-scale cleaning of fermentation tank every year. It is best to carry out it once every 4-5 years

I. cleaning method of fermentation tank

automatic operation is usually adopted to the greatest extent in the brewing and beverage industry. At present, the most commonly used method is fixed washing ball cleaning, and rotating nozzle cleaning is also more and more used

1. Fixed washing ball

the traditional fixed washing ball is still the most commonly used cleaning device since it came out at the beginning of last century. Many suppliers offer washing balls in various forms, sizes and capacities. It can spray the cleaning liquid to the tank wall for fixed and simple cleaning

the fixed washing ball is best used to wash the tank wall. Water is sprayed from a separate spray hole with holes and flows to the same position of the tank wall. Due to the limitation of the size of the nozzle, the force of each impact point to the tank wall is very limited, and the water volume at the point without impact is actually zero. This means that in order to achieve the required cleaning effect, a large number of high concentration chemical cleaning agents or high-temperature cleaning fluids must be used for long-term cleaning

the fixed washing ball can also be used as a kind of particulate matter in the filtered washing liquid. Therefore, part of the washing ball holes are easy to be blocked and ineffective, resulting in unqualified cleaning of the tank wall surface. Generally, this phenomenon will not appear immediately. It will be found only when it is accumulated to a certain extent

2. Rotating nozzle

many examples show that the rotating nozzle is better than the traditional fixed ball washing. The rotating wind generated by the rotating nozzle makes the tank wall sprayed in an irregular way. The combination of cleaning method and mechanical impact force uses less water than the fixed washing ball, which can consume a small amount of chemicals and remove residues in a short time

II. Necessity of large-scale cleaning

in the process of beer production, there are many containers and long pipelines for materials, and the raw materials used are rich in nutrients. As a result, the beer production process requires frequent cleaning of equipment and pipelines to create excellent value of products, which provides strong support, high and difficult. In the daily cleaning work, it is inevitable that there will be a dead corner of equipment hygiene, which will affect the hygiene control of the production process

in order to eliminate the sanitary dead corner of daily cleaning, the equipment can be thoroughly cleaned in the off-season with strong cleaning agent or manually. We call it "big cleaning" to avoid affecting the product quality due to the accumulation of dirt in the sanitary dead corner of the equipment

III. problems in actual cleaning of fermentation tank

1 During the fermentation process, a large number of organic substances such as protein, hops resin, polysaccharide and yeast and inorganic substances such as calcium oxalate and sulfate will be produced. After the fermentation tank is empty, the organic and inorganic pollutants will adhere to the tank wall and appear yellowish brown. When there is a large amount of tartar, the surface is white. Like the skin of saline alkali land, inorganic matter and organic matter are intertwined with each other

the use of caustic soda during cleaning is only effective in removing organic matter. Only when the cleaning temperature reaches more than 80 ℃, can it have a better cleaning effect

when cleaning, a single nitric acid is used for cleaning, which only has a certain effect on inorganic matters, but is almost ineffective on organic matters. The dirt on the fermentation tank wall is a mixture of inorganic and organic matter, which is difficult to clean with a single cleaning agent. Therefore, some breweries will clean the fermentation tank once a year and thoroughly clean the fermentation tank

2. The t541 anticorrosive coating on the fermentation tank wall was partially damaged. After repair, the surface finish decreased significantly, making it difficult to clean the dirt on the tank wall

3. The abrasion or blockage of the tank washer or washing ball leads to incomplete cleaning of some fermentation tanks and more dirt accumulation

due to the above factors, a certain amount of dirt has accumulated on the fermentation tank wall after several years of use, which is difficult to be completely removed by conventional cleaning process. Therefore, every 4 to 5 years, the fermentation tank can be deeply cleaned in the off-season

IV. fermentation tank cleaning process

according to the size and frequency of fermentation tank, the author specially formulates the following process:

1 Add alkaline washing solution (CIP)> <1 ton to the preparation tank

(2) add 300kg HPC-1 high-efficiency alkaline cleaning agent and 150kg caustic soda in turn

(3) make up the residual water to 5T, and raise the temperature to 65 ℃ for standby

2. Preparation of acid washing solution (calculated as 5T)

(1) add some cold water to CIP tank

(2) add 300kg HPC-4 high efficiency acid cleaning agent in turn, and then add some cold water

(3) finally add 200kg penetrant, supplement the remaining water to 5T, and use it at room temperature for standby

3. The specific operation process

(1) wash the tank with warm water for 15 minutes

(2) the alkaline detergent shall be circulated for cleaning for 3.5 hours to ensure that the reflux temperature is not lower than 62 ℃ (the circulation time shall be counted when the reflux temperature reaches the process regulations)

(3) rinse the tank with clean water until the return water, and the pH value is neutral

(4) wash with acid detergent for 2.5 hours at normal temperature

Rinse the tank body with clean water to a pH value of <5

4. Replenishment process of washing tank

after cleaning a fermentation tank, it is necessary to add drugs to the washing tank before cleaning the next tank

(1) alkaline detergent: add 100kg of HPC-1 and 60kg of caustic soda

(2) acid washing solution: add 100kg of HPC-4 and 60kg of penetrant

(3) after brushing 6 fermentation tanks, release the washing solution and prepare again

5. Precautions

(1) when preparing acid detergent, it should be noted that HPC-4 high efficiency acid detergent stock solution and penetrant stock solution cannot be contacted

the correct preparation is: first inject 1/4-1/3 water into the washing tank; Then slowly add acid cleaning agent, and slowly add penetrant after adding water again to more than 1/2; Finally, add a little water to the detergent scale

(2) the CIP system shall be added with a self-cleaning system, and the CIP tank itself shall be kept clean and cleaned regularly. A filtering system shall be set on the circuit, which can not only ensure the cleanness of washing liquid, but also prevent dirt from entering the scrubber and causing blockage

(3) the sampling valve shall be backwashed simultaneously during CIP cleaning

(4) after the hose and connecting pipe are thoroughly cleaned, they shall be soaked in disinfectant, and the hose shall be brushed and cleaned regularly

(5) increase the cleaning, sterilization and protection of nozzle, sampling valve, connecting pipe and other parts to prevent secondary pollution

(6) ensure the normal operation of the washing system, including whether the can washer rotates, whether the washing ball is blocked, whether the pressure is appropriate, etc

the working pressure of ball washing shall be 0.35 ± 0.05Mpa, that is, the pressure gauge value at the outlet of CIP tank shall be 0.45mpa-0.50mpa (considering the influence of pipeline, curve and tank height). If the pressure of the washing ball is too high, it is easy to cause atomization and affect the use effect. The working pressure of the tank washer shall be ≥ 0.35Mpa, and the value of the pressure gauge at the outlet of the CIP tank shall be 0.55mpa-0.60mpa

(7) after the circulation of alkaline detergent, the flushing process must be interrupted to prevent the foam from staying at the bottom of the tank. Although the pH value test is neutral, it is not necessarily the true result. Intermittent flushing can completely flush the alkaline solution and foam, and eliminate the adverse impact of residual alkaline solution on the acidic detergent and bactericidal solution. In addition, special attention should be paid to the dead corner of CIP system, that is, all parts in contact with cleaning agent must be flushed to neutral with clean water before sterilization process

(8) if liquid ammonia is directly used as the refrigerant in the large tank, the liquid ammonia shall be completely recovered and then the large scrubbing process shall be carried out

(9) confirm that the vacuum valve of the large tank works normally

(10) the operator shall be well protected, wear gloves, protective glasses, etc., do not splash on the skin and eyes, accidentally splash on the skin, and wash with a large amount of water

v. effect comparison after large-scale cleaning

before production in 2007, after the fermentation tank was thoroughly cleaned by large-scale cleaning process, the hygienic qualification rate of fermentation broth was greatly improved compared with that in 2006

after large-scale cleaning, the internal appearance of the fermentation tank is like a new tank, bright and clean

according to the above statistical analysis of large-scale cleaning of fermentation tank, large-scale cleaning of fermentation tank before production every year can thoroughly clean the dirt accumulated in the tank after one year of use, which is conducive to improving the level of fermentation hygiene control and product quality. However, the cleaning cost has increased

in short, in the process of beer production, hygiene control is a systematic project.
